Country Life

I am from the city. I’ve lived my whole life in cities.

But I love the country.

When I moved to a tiny town to attend college, I had never been away from the city and thought I would hate living 45 min. from the nearest “civilization”.

But, oh, I was so wrong! I fell in love with quiet evening walks, the slower pace, the friendliness in the people, the absence of traffic & honking horns.  I enjoyed all the trees and birds, and wildlife that was all around.  Yes, I definitely fell in love with the country.        …Sigh    …And I’ve never gotten over it.

I even enjoy the chickens.

 

 

This pretty chick had several friends with her, several different kinds.  I’m not familiar yet with the different varieties but they were all beautiful.  I had fun just watching them and having a photo shoot of my own.

Maybe when we move to our new place I can have chickens?! Fun!!

Sofrito

I’ve often been asked what I use for seasoning in some of my recipes.  Sofrito is a funny name but it’s an easy, basic and quick way to add a lot of flavor to your dishes.

I usually make a big batch and freeze what I don’t use that day.  You could even fill ice cube trays and after they’ve frozen, place the “cubes” of sofrito into a zip lock bag for later use.  Just drop 2-3 cubes into your pot and it will add so much flavor!

Just blend all the inredients.

You can also place the sofrito in a jar and place in the fridge if you’re going to be using it soon.

I use sofrito in dishes such as Red Bean Soup.  It’s hearty, perfect for a cold winter meal…
Or any day.
It’s just perfect.

I also use sofrito as a rub on my roast chicken.  The skin comes out crispy and full of flavor.  My kids love this!  How easy can it get?! Just rub on and put in the oven for 1 hour.  Dinner is done!

I use sofrito in black beans, pot roast, and it’s great for slow cooker recipes such as stews and soups.

There are many variations to this but this is what has worked best for me.  I leave out some things so that I can later add what I need depending on what I’m cooking (I add bay leaves to black beans, oregano to soup, cilantro to “posole”, etc).  You get the idea.

Sofrito Recipe 

1 green pepper
1 large onion (or 2 medium)
1 whole head of garlic cloves, peeled
1/4 cup olive oil
2 tbl vinegar (I use either apple cider vinegar or balsamic)
1 tbl cumin
sprinkle of paprika

Enjoy!

Blooming

It seems that my plants know that summer is ending and they have decided to bloom one last time before settling down for cooler weather.  I can’t wait for fall and the coolness in the air, but as long as the flowers are blooming, I won’t complain about the weather.

 

Saturday is officially the first day of fall and from what I hear on the news, some of you are already experiencing it, while others are expectantly waiting for it.

 

 

Wherever you are, go outside if you can and enjoy the weather!

Beware of Alligators!

If you visit or live in Florida and go near any lake, you will inevitably see this sign:

We recently visited our son and daughter-in-law, and while we were taking a walk around the lake, we saw several of these signs.  Most lakes in Florida have this same sign.

When we used to live in South Florida, on one of our trips down “Alligator Alley” we counted over 100 alligators.  Of course, the kids were small enough to enjoy those kinds of games.  I don’t think they’d enjoy it as much now that they’re adults!  Maybe some of you are saying, “I would!” — probably those of you who have never seen an alligator.

We used to live on a small lake and people would say, “Oh, go ahead and swim, there aren’t any alligators here.”  I knew better because I’d live in Florida before.  Sure enough, after several months there, we found 2 alligators enjoying themselves, just floating and sun bathing in different yards each day.

If you ever visit Florida, go to the beaches (they’re beautiful!!)
but be careful when swimming in lakes
…unless you take the Wildman with you, or one of the guys
on the show Swamp People. 🙂

New Week

The past 2 weeks have been challenging for me.  We recently lost a friend to a violent death and though I know grief and have mourned the loss of loved ones, it never gets any easier.  To be honest with you all, I just haven’t felt much like posting.

Just thought I’d let you know I haven’t forgotten my blog…
It actually feels good to be back.
I am away from home this week, but will try to post anyway.
