Sofrito

I’ve often been asked what I use for seasoning in some of my recipes.  Sofrito is a funny name but it’s an easy, basic and quick way to add a lot of flavor to your dishes.

I usually make a big batch and freeze what I don’t use that day.  You could even fill ice cube trays and after they’ve frozen, place the “cubes” of sofrito into a zip lock bag for later use.  Just drop 2-3 cubes into your pot and it will add so much flavor!

Just blend all the inredients.

You can also place the sofrito in a jar and place in the fridge if you’re going to be using it soon.

I use sofrito in dishes such as Red Bean Soup.  It’s hearty, perfect for a cold winter meal…
Or any day.
It’s just perfect.

I’ll have to post this recipe soon! It’s a good one 🙂

I also use sofrito as a rub on my roast chicken.  The skin comes out crispy and full of flavor.  My kids love this!  How easy can it get?! Just rub on and put in the oven for 1 hour.  Dinner is done!

I use sofrito in black beans, pot roast, and it’s great for slow cooker recipes such as stews and soups.

There are many variations to this but this is what has worked best for me.  I leave out some things so that I can later add what I need depending on what I’m cooking (I add bay leaves to black beans, oregano to soup, cilantro to “posole”, etc).  You get the idea.

Sofrito Recipe

1 green pepper
1 large onion (or 2 medium)
1 whole head of garlic cloves, peeled
1/4 cup olive oil
2 tbl vinegar (I use either apple cider vinegar or balsamic)
1 tbl cumin
sprinkle of paprika

Enjoy!

Happy cooking,
Daisy

Blooming

It seems that my plants know that summer is ending and they have decided to bloom one last time before settling down for cooler weather.  I can’t wait for fall and the coolness in the air, but as long as the flowers are blooming, I won’t complain about the weather.

Saturday is officially the first day of fall and from what I hear on the news, some of you are already experiencing it, while others are expectantly waiting for it.

Wherever you are, go outside if you can and enjoy the weather!

Have a terrific weekend,
Daisy

Beware of Alligators!

If you visit or live in Florida and go near any lake, you will inevitably see this sign:

We recently visited our son and daughter-in-law, and while we were taking a walk around the lake, we saw several of these signs.  Most lakes in Florida have this same sign.

When we used to live in South Florida, on one of our trips down “Alligator Alley” we counted over 100 alligators.  Of course, the kids were small enough to enjoy those kinds of games.  I don’t think they’d enjoy it as much now that they’re adults!  Maybe some of you are saying, “I would!” — probably those of you who have never seen an alligator.

We used to live on a small lake and people would say, “Oh, go ahead and swim, there aren’t any alligators here.”  I knew better because I’d live in Florida before.  Sure enough, after several months there, we found 2 alligators enjoying themselves, just floating and sun bathing in different yards each day.

If you ever visit Florida, go to the beaches (they’re beautiful!!)
but be careful when swimming in lakes
…unless you take the Wildman with you, or one of the guys
on the show Swamp People. 🙂

Happy swimming,
Daisy

New Week

The past 2 weeks have been challenging for me.  We recently lost a friend to a violent death and though I know grief and have mourned the loss of loved ones, it never gets any easier.  To be honest with you all, I just haven’t felt much like posting.

Just thought I’d let you know I haven’t forgotten my blog…
It actually feels good to be back.
I am away from home this week, but will try to post anyway.

Thanks for your friendship!

Love,
Daisy

House Hunting…

Yes… It looks like my husband and I have to move.  Where?  Not sure.  Because of my husband’s job, we have different options (within the State).

We might end up renting, but if we buy a house, I’m leaning toward either a Historic Home or a brand new home.

“Why?” you ask?

Well, the brand new house is new so we don’t have to
worry about fixing anything for about 10-15 yrs.  The negative is the HOA.
(Home Owners Association)…which I hate…been there, done that kinda thing.

Then, about the historic homes… the pro is that it has a lot of character
and features that new homes don’t have and I really like that.  The con
is that we’ll probably have to fix something… or some things.
So, I wanted to show you some of the ones that have made it to my “favorites” list…
We haven’t had a chance to go see these yet, so we don’t know what the
neighborhood around the home looks like… which is a big deal…
remember, “location, location, location”?
I like the porch on this one below… I’d make some changes and add some trim,
but overall it looks good262 NE 2nd St, Webster, FL 33597
This one below is my favorite, I think.
302 W Howry Ave, Deland, FL 32720
This one needs a lot of work, but I can see it has so much potential!
This porch is my favorite, too.
(undisclosed Address), Wildwood, FL 34785
This one may look a bit downcast, but, oh, the possibilities!
200 Hiawatha Cir, Leesburg, FL 34748
Okay, so this one looks REALLY bad, but because of that, the price is
really good.  I just don’t know if we could do all the work required…
811 W Euclid Ave, Deland, FL 32720
So….. what do you think??
Any advice?
Any pitfalls to avoid?
Help!
Have a terrific weekend!

Love Birds

These two belong to my daughter…

Mr & Mrs Lovebird

They are love birds… and very  entertaining to watch.

This is Bubs.  He loves when they let him out of the cage everyday and he can fly around.

This is his lovely wife, Birdie.  She’s had “babies” 3 times! A total of 8 “children”!!  She’s been a great Mom…and Bubs has been a great husband & father.

They love to play with my son-in-law…

They like to let him know they love him by giving him little kisses!
(She’s a little shy…)

They get jealous sometimes and peck at each other… kind of like old, married couples like to argue 🙂

But overall they get along fine.

These two are loved and very well-taken care of…
and they know it!

Have a wonderful week!
