Colorado

image(The view from the hotel lobby!)

This wasn’t my first time in Colorado, but oh…
How beautiful the mountains all around!

Every morning when we came down to the lobby for breakfast,
the view was spectacular.

I guess people who live here are pretty much used to it
and don’t pay much attention to it…
But I couldn’t take my eyes off the beauty!  🙂

When I lived close to the Smoky Mountains,
I never got “used” to it.

Every time I went outside, I couldn’t help but smile.
The fall colors!  The Spring!  The summer greens!
It didn’t snow except maybe twice a year,
but everything looked so beautiful!

During the week in Colorado,
the temperatures were pretty cold (at least for me!)
But I walked across the street to a shopping area
where I had lunch everyday.
It was 26* and windy, so I was cold!

I didn’t take my “real” camera with me,
but I managed to get this photo with my cell phone.

I spent the week in a personal prayer retreat during the mornings.
Those times of pulling away from everything
and just being alone with God
was something I longed for.
I feel like it’s “recharging”, literally.

In the evenings, my husband & I got together with friends
for some wonderful times of fellowship.
It was fun and refreshing to spend time with them,
since we rarely get the chance to just relax together
and not be problem-solving or counseling for
serious situations.

It was a blessed time and I’m so thankful I was able to go!

Now it’s back to “real life” but every now & then I remember,
and I just smile.

Happy Thursday, everyone!

Farmer’s Market

I found a new Farmer’s Market not too far from where I live…

img_1547

The produce is so fresh and such a great variety!

img_1548-1

These radishes are delicious.  I put them in salads,
but most of the time I just eat them raw as a snack.
Is that strange??

img_1552

Huge tomatoes, so good!

img_1549-2

I couldn’t believe how sweet the grapes were!!

img_1551

The peppers were 2 for $1
I roast them in the oven and put them in salsas
or to flavor soups.

Delicious!!

img_1553

Cilantro, parsley, greens…  big bunches

img_1556

This Farmer’s Market also has a “Flea Market” section.
I bought hibiscus, azalea, and each one was only $6.

img_1555

My favorite buy was the Orchids!
I got four different kinds and they were each $3!!!

They make great Christmas gifts.
I wanted to keep them, but then I figured
I could just get some more after Christmas.

Have a wonderful weekend, everybody!

Time stands still

It’s been a while since my last post.

I just couldn’t bring myself to write.
Anything.

I tried to “suck it up”, talk myself into posting,
maybe write about something like what I usually do —
photography, cooking, sewing, …
but I just couldn’t do it.

My youngest granddaughter, who is doing fine now,
was in the Pediatric ICU.

unnamed

I don’t want to dwell on all that happened those days
but it was heart-wrenching, literally.

We are so very thankful and grateful
that she is doing fine.
Words cannot express it.
I still cry sometimes when I see a new picture of her
that my daughter texts me, or a video of how she’s
laughing and chatting away.
Even now, as I write, I find myself overcome with tears.
So thankful for her life.

Some of you may know what I’m talking about when I say
there are pictures in our minds that we try to forget,
mainly seeing loved ones suffer.
Again, I’m so thankful she’s doing fine.
I try to replace those images from the hospital
with new ones from this past week, yesterday, today…
She’s growing so fast and she’s so cute,
I pick up my phone and scroll through videos
and photos, making new memories with her.

It’s really amazing how a little person,
so young, so small,
so wonderful,
can become so loved and such an important part
of what makes our heart flip with joy
whenever they smile at us
or laugh at one of our silly faces.

unnamed

Please pray for her continued healing.

Thank you to those of you who wrote me
and let me know that you missed me.
It meant a lot to me.

I will post as much as I can the next few weeks.

I pray your December is filled with many blessings!

Oatmeal

My doctor gave me a list of foods I need to eat frequently…

Oatmeal was on that list.

Apparently it lowers your cholesterol.

But the oatmeal I was used to eating, was the one that I made
and it included lots of dried fruit, a few (maybe 2 or 3) almonds,
whole milk, brown sugar (or honey), and cinnamon.

I don’t think that’s the kind the doctor meant.

Sooooooo………

I had to come up with a healthier recipe for me to eat
since I have want to have it at least 3 times a week.

Here are a few options I came up with:

IMG_0497

I love this one!  It’s an apple topping I thought of one day
probably because I love apple pie and I can’t have that right now.

Apples are also on that doctor’s list, btw.

IMG_0603

Apples are on sale again and they look and smell wonderful!!
I just bought 5 lbs today so I can make some apple sauce.
(and oatmeal, too, of course!)

IMG_0604

I choose a nice, firm apple . . .

IMG_0606

IMG_0605

IMG_0607

I know all these pictures aren’t really necessary…

It’s like I can’t help myself.

I just love the colors, the apples, …
Thought it would make a great photo…
(I’m always looking at the world as through the lens of a camera —
that’s my only excuse).

Please bear with me.

IMG_0609

After I peel, core, and chop the apples,
I add a little brown sugar…

IMG_0610

And some cinnamon.

IMG_0612

I stir it and cook it in a small skillet or sauce pan (doesn’t really matter)
for about 5 minutes, just until the flavors blend and the apples soften a bit.

IMG_0501

The whole house smells wonderful when this is cooking!

IMG_0497

While the apples are cooking, I make the oatmeal in the microwave.

I use 1/2 cup of oatmeal and 1 cup of milk, a pinch of salt, 1/2 tsp of cinnamon,
and 1 tsp of brown sugar (or honey).  If you like it sweeter, add a little more
sugar.

IMG_0500

When the oatmeal is done, and the apples have cooked enough,
I put the oatmeal in a pretty bowl, then spread the apples on top.

IMG_0498

If it’s too dry, I add a splash more of milk.

My husband prefers slicing a banana over the oatmeal
and sprinkling just a tiny bit of cinnamon over the top.

IMG_0510

He also loves some almonds, a few raisins, granola, …
whatever he can find in the pantry that he thinks will go well with it.

I don’t add nuts to my oatmeal because they are a headache trigger,
so it’s just better if I stay away from them.

IMG_0594

I’m always looking for new toppings for the oatmeal,
and I’m really enjoying the nice, warm breakfast it provides.

It’s delicious and very comforting.

Now, not many things are both delicious AND “ordered suggested by your physician.”

This is one thing I can eat and feel great about.

Let me know if you have any other ideas,

Daisy

Homemade Pizza

I was craving pizza last night,

but I’ve been away and haven’t had time for grocery shopping,

so I just used what I had in my fridge & pantry…

IMG_1182

The result was an interesting (but tasty) combination
of some random items I normally would never consider putting on pizza.

I started out by making the dough for the crust.

I actually love this part.

IMG_1160

Peeking inside the bowl…

I love the smell of dough, and when I let it rise
and come back, it’s amazing how it’s doubled it size!

I cover the bowl with a light-weight towel and forget about it for about an hour.

IMG_1161
It’s pretty cool how it grows and becomes so soft.

I love this part, too… Now I get to play with the dough
and form the pizza crust.

It reminds me of playing with Play Dough! 🙂

IMG_1169
When the dough has risen, I put a little bit of flour on the counter
and I either roll it out to the size I want, or I just plop it onto the greased
pizza pan (or cookie sheet, in this case).

IMG_1170

I like this part, too!  I use my fingers to softly spread the dough
over the cookie sheet.

Someday I’ll buy a pizza pan!
IMG_1171
These are the simple ingredients I used on the curst.

IMG_1172
First, I sprinkle garlic powder over the crust,
then I spread olive oil on that.

IMG_1173
Then I pour some of the sauce…
Sometimes I make my own sauce, but this time I just decided to make things easy.

IMG_1174

I use this cheese for sandwiches…

I’ve never used this one on  pizza before, but it works well
if you like some heat.

I think it would’ve worked out fine…
…but I also put some hot chiles (in lieu of red/green peppers)…
In my defense, …I was tired, hungry, sleepy, exhausted,…
I wasn’t thinking.
…let’s just say the pizza was HOT!
But delicious.

IMG_1165

These are the toppings I came up with in my limited pantry:

Corn (I know! I know! It’s not traditionally a pizza topping, but…
I was desperate,…what can I say?)
Black beans (same excuse as with the corn)
Chiles (I didn’t have any red or green peppers so I thought this was the next best thing)
Black olives
Meatballs (Leftover from last night’s dinner) Cut into quarters.

IMG_1175

After the cheese, I put the meatballs…

IMG_1176Then the corn…

IMG_1177
Black beans,…

IMG_1178

Black olives, and green chiles…

IMG_1179
I’m SO glad I had this cheese!!

I sprinkled it all over the pizza.

IMG_1181

It actually looked pretty good.

I baked it for about 20 minutes at 425 degrees.

IMG_1183

I was surprised at the flavor.

I didn’t expect it to be so spicy
—-(I’d forgotten about the cheese slices underneath everything)

I didn’t expect to like the mixture of the toppings as much as I did.
—-(maybe the fact that I was so hungry had something to do with it?)

IMG_1184

The crust was crispy on the outside and soft on the center.

It was tasty and just what I was craving.

Not as good as the Pizzeria, but a little healthier.  🙂

IMG_1182

It’s really not difficult to make pizza
and it’s fun!

Hope you’ll give it a try!

RECIPE FOR PIZZA CRUST:
1 cup warm water
1 envelope active dry yeast
1 Tb sugar

I warm the water in the microwave;
warm enough but not hot.
Then I add a tablespoon of sugar to the water,
add the yeast, and use a whisk to mix it well.
Let it sit for about 5 minutes, until bubbly.

While the yeast is working, I mix the dry ingredients:
3 cups bread flour
1 Tb sugar
2 Tb olive oil

Add the wet ingredients to the dry, until a dough begins to form.
Transfer to floured surface and knead until soft and smooth.
Place in greased (with olive oil) bowl, and let rise for one hour.
Remove from bowl and either roll dough or use fingers to desired
shape in pizza pan or cookie sheet.

Top crust with your favorite toppings and sauce.
Bake for 20 minutes at 425 degrees, in preheated oven.
Enjoy!

Last week I was tired and felt a little like Heidi…
(she missed the mountains and the great outdoors!)

So…
My husband & I drove to the nearest beach
and took a walk…

IMG_0535

It might seem like it’s night time in this photo,
but actually, it’s early morning on the beach.

The skies were cloudy,
so even though the sun had technically risen,
it wasn’t as sunny as a “normal” sunrise.

All I had was my cell phone,
but I wanted to take some pictures.

IMG_0538

The little birds were just waking up, it seemed.

IMG_0539

If you click on this photo above, and zoom in,
you can see a line of birds flying just above the water.

IMG_0541

The sound of the waves, the water between our toes,
the breeze…
Ahhh.

This is what I needed.

IMG_0540

Ever so slowly, it began to get a little brighter…

IMG_0596

“You rule the swelling of the sea.”  Psalms 89:9

We walked for a mile and a half.

IMG_0595

In some places, close to hotels,
the workers had begun to set up
umbrellas & chairs for rentals.

In a few hours, this place would be
crowded with  lots & lots of people.

But for now, it was just a few, here & there,
walking, some jogging, some riding their bicycles.

IMG_0537

By the time we had turned around and returned to where we had started,
it was much brighter.

And so it was for me.

Take time to go outside and enjoy it.

Have a terrific weekend,

Daisy

Lemonade Slushy

Its been SO hot lately…

We needed something COOL to drink!

IMG_0253

Lemons were on sale!

IMG_0243

Don’t you just love the beautiful color of lemons??

IMG_0245

They just say SUMMER to me.

IMG_0246

Lemons, water, sugar, and ice.

That’s all you need for this refreshing lemonade slushy.

IMG_0250-0

I used 3 lemons
3/4 cup sugar
1 cup ice
1-2 cup(s) of cold water

Put in blender
then pour into chilled glasses.

IMG_0249

It is so good!!

IMG_0255

You can add more lemons/sugar/water according to your taste.

IMG_0256

So refreshing!
So easy!
So quick!

IMG_0254

My family loves when I make this.

It lasts about 1 minute.

A Visit

It was so good to visit my Dad recently.

I don’t get to see him as often as I’d like.

IMG_0197

Visits to see Dad usually include a walk in the backyard.
It was the end of the mango season for his trees…

IMG_0196

He counted seven on this tree…

IMG_0198

They would be the last ones of the summer…

IMG_0200

I did get to eat one or two that he’d pick earlier.  They were delicious!!
IMG_0201
They smell so good!
I wasn’t the only one enjoying these delicacies…

IMG_0219

There he is in his workshop, enjoying the fruits of his labor,
taking a break from work.  That’s his lovely wife.
They’ve been married for over 15 years (my Mom passed away many years ago).

IMG_0199

I did get to bring one or two of these home with me.  🙂

Later that night he decided to cook some ribs on the grill.

IMG_0286

I made a rub for them, and he put them on the bbq.

IMG_0289

He kept a close eye on them until they were done.

IMG_0288

We had a great time that night.
My brother & his wife & kids came over and we laughed a lot
as we always do when we get together.

It was a short visit but oh, so sweet.

Enjoy your summer.  🙂
