We woke up to a snow blanket covering our part of the world.
How beautiful!

I’m in Ohio, and it has been snowing on & off since yesterday…

I went to a cute little County Fair this past weekend.
My favorite part is always the animals…
I have to tell you, though, I was very disappointed to learn that the chickens and roosters were not scheduled to arrive for another 3 days! That is always my favorite section!
Oh well, maybe next time…Sigh…
They also had an old building filled with different kinds of historical displays…
I was so excited when I saw some quilters demonstrating the art of hand quilting. It was fun talking to them.
There was also different sewing machines from the early 1900s
Outside, there was a large display of different kinds of machinery and other “vehicles”
It was a fun time, just walking around, enjoying the different areas. It was a small fair but there was something for everyone… Rides, food, contests,…
There were several groups performing at various stations and I enjoyed listening to them.

I love apple season.
I buy the bags of apples marked .99 lb
I stick my nose in the bag and smell that
wonderful scent of apples…
I must look funny, but I don’t care.
I feel inspired to bake…
apple pie, turnovers, bread, and . . .
Apple Sauce.
This is my first year making apple sauce.
My friend just happened to mention that she
was making apple sauce, and because she’s such a wonderful cook,
I asked her how she made it.
I always thought it would be a complicated process,
too difficult for someone like me who usually does
the quick & easy recipes.
But I couldn’t believe how easy and simple
the entire process was.
I just washed, cored, and cut the apples into big chunks.
Yes, that’s right… you don’t have to peel them!!!
That alone is what inspired me to try this recipe.
I combined a half cup of brown sugar,
a sprinkling of ground cinnamon (about 1 tsp)
and tossed the apples with this mixture
along with 10 Red Hot candies.
I then added 2 cinnamon sticks,
one tablespoon of vanilla,
and 2-3 star anise
to the big pot (with the one inch of water).
Just before the water began to boil,
I poured in the apples,
and covered the pot.
I waited til the water boiled,
then I turned the temperature down to a very low simmer
and left it on the burner for about 2 hours,
stirring once in a while.
The whole house smelled of cinnamon and apples!
When the apples were of apple sauce consistency
…you might like yours more chunky or less chunky…
I turned the stove off and let them sit until
they weren’t hot any more… just warm.
I had never had warm applesauce…
but I just couldn’t wait to try it!
… so … I did
and it was delicious!!
I was surprised how good it tasted.
I guess I really didn’t expect it to be better
than the store-boought.
But it was!!
This weekend I went back and bought another 2 bags of apples.
Guess what I’m doing today? 🙂
I froze most of the apple sauce I made
so it will stay fresh longer,
and I plan on making some to put in pretty jars
to give away.
Fun to make, good to eat, and great gift idea!

now is a good time to take advantage of the sales!

My husband & I recently celebrated out 30th wedding anniversary!!
…to celebrate, we planned a very special trip,
however, things don’t always go as planned,
and I found myself in the ER just two days before
we were scheduled to leave on our trip.
I am so thankful that it was nothing serious and I am recovering.
If you’ve ever been in the ER,
especially if you have a lot of pain,
all kinds of thoughts want to rush in
and fill your mind with visions of what could happen…
It’s not easy to keep those thoughts from taking over.
I thank God that I felt his peace,
His comfort,
and his strength.
…and that I was happily released about 5 hours later!!
We didn’t exactly get to go on the trip we wanted,
but we did go to a nice place and get some fresh air
up in the Blue Ridge Mountains…
We went on a hike and I’d like to show you
some of the things we saw…
It was hard to walk past the pretty flowers
without stopping to take 5-105 photographs…
My husband is a very patient man.
We came across this bench with a heart shaped by flowers!
Some of the more steep areas had steps…
We had a great time!
Now we’re ready for another 30 years of wedded bliss!!
I am blessed beyond measure!
My husband is my best friend,
he is an amazing person in many ways,
…and we’re still very much in love!
